This week, we’re toasting Cucumber Watermelon Margaritas. Made by blending fresh cucumber and watermelon, this cocktail is one part smoothie, so we’re not exaggerating when we say we’re having happy hour the healthyish way. Simply blend watermelon and cucumber slices to your desired balance. Make some extra while you’re at it, so you can whip up round number two of these Cucumber Watermelon Margaritas with ease.

Cucumber Watermelon Margaritas

Serves: 1


  • 1  1/2 ounces tequila
  • 1/2 ounce cointreau
  • 1/2 cup cucumber watermelon juice
  • Juice of half a lime
  • 1 cups ice
  • Margarita Salt or Trader Joe’s Chili Lime Seasoning


  • watermelon slice
  • fresh mint sprig


Run a lime wedge around the rim of a glass and dip in salt. Fill the glass with ice. Fill a cocktail shaker with ice. Add tequila, cointreau, cucumber watermelon juice and lime juice. Shake to combine. Strain the cocktail over the prepared glass and garnish with a watermelon slice and fresh mint.

For a complementary cake pairing, try our organic Tangy Lemon Cake with Vanilla Bean Frosting, fresh strawberries and another sprig of fresh mint, or try topping your cake with homemade strawberry compote.
