For those of us Healthyish eaters who live in places with long winters, Memorial Day Weekend feels like a gateway to outdoor celebrations and a ceremonial unveiling of the grill- a time to gather with friends, gather on a balcony with a crisp rosé, soak up the spring temperatures and most importantly- sleep in on a Monday! Just because the focus is on the grill this weekend, doesn’t mean you can’t focus on dessert.
Whether you’re hosting or attending a party, Memorial Day Weekend is a great time to introduce your inner circle to the sweet satisfaction of these perfectly portioned cakes. Bring a variety, and have friends pick and choose their favorite flavors. Before sizzling up the burgers and dogs, grill up a variety of fruits like pineapple, peaches and nectarines. For an extra hint of flavor and healthy fats, spritz or drizzle the fruit with coconut oil before grilling, then add our coconut flakes as a finishing touch.
The heat brings out the extra sweetness in the fruits, a perfect pairing with cake flavors like vanilla bean or tangy lemon. Grill up a platter, and let friends top cakes as they please. Garnish with fresh sprigs of mint and serve with a chilled glass of wine for a classy take on the weekend bbq.
The mint and peaches are also good to have on hand in case you go the cocktail route as the festivities progress- muddled Peach Juleps, anyone? It wouldn’t hurt to have some organic vanilla ice cream on hand either.
So as you take to your balconies and backyards for BBQ’s this weekend, don’t forget to take your Healthyish cakes because it wouldn’t be a celebration without dessert!
