It’s time for another #HealthyishHappyHour, and we’re spicing things up with Mango Jalapeño Margaritas and organic cakes with fancy mango roses. You should probably break out the chips & guac too- Olé!

This edition of the #HealthyishHappyHour calls for some heat, in the form of Mango Jalapeño Margaritas. Depending on where the happy hour conversation goes, or if your best friend is with you, you never really know if tears will flow at a happy hour. At least with these Mango Jalapeño Margaritas, you can just blame the jalapeño, then pull yourself together. That being said, we do recommend removing the jalapeño seeds, but you don’t have to tell anyone if that’s your excuse. Stick to it.

What makes these Mango Jalapeño Margaritas healthyish is the pure mango juice. You’ll be drinking a boost of Vitamin A and C, without any added sweeteners or weird preservatives. We’ll cheers to that!

Mango Jalapeño Margaritas

Serves: 1 (but we recommend a second round!)

Ingredients

  • 1 1/2 ounces tequila
  • 1/2 ounce cointreau
  • 1/2 cup of mango juice
  • Juice of half a lime
  • ice

Garnish

  • Margarita salt or Trader Joe’s Chili Lime Seasoning
  • Jalapeño slices
  • Fresh mango slice
  • Lime wedge
  • Fresh mint

Directions

Run a lime wedge around the rim of a glass and dip in salt. Fill the glass with ice and a couple jalapeño slices. Fill a cocktail shaker with ice. Add tequila, cointreau, mango and lime juices. Shake to combine. Strain the cocktail over the prepared glass and garnish with a lime wedge, mango slice and fresh mint.

We always try to avoid extra sweeteners in our happy hour drinks because we prefer to save our sugar for cakes!

Healthyish Cake Pairing

Start with a Tangy Lemon or Mellow Yellow organic cake mix, top it with a generous dollop of organic Vanilla Bean Frosting, then garnish with thin strips of mango and fresh mint to create a flower just for you. You’re worth it!
