There’s nothing quite like a slice (or a quarter) of a juicy watermelon in the summertime. The only way to top that refreshing slice? Cucumber Watermelon Margaritas!
You’re invited to a virtual #HealthyishHappyHour, in which we toast to being bosses, working our asses off, enjoying hard earned time with friends, and most importantly, treating ourselves to individually portioned desserts. Remember to use this hashtag on your Thirsty Thursday adventures, so we can put that social part back in social media.
This week, we’re toasting Cucumber Watermelon Margaritas. Made by blending fresh cucumber and watermelon, this cocktail is one part smoothie, so we’re not exaggerating when we say we’re having happy hour the healthyish way. Simply blend watermelon and cucumber slices to your desired balance. Make some extra while you’re at it, so you can whip up round number two of these Cucumber Watermelon Margaritas with ease.
Cucumber Watermelon Margaritas
- 1 1/2 ounces tequila
- 1/2 ounce cointreau
- 1/2 cup cucumber watermelon juice
- Juice of half a lime
- 1 cups ice
- Margarita Salt or Trader Joe’s Chili Lime Seasoning
- watermelon slice
- fresh mint sprig
Run a lime wedge around the rim of a glass and dip in salt. Fill the glass with ice. Fill a cocktail shaker with ice. Add tequila, cointreau, cucumber watermelon juice and lime juice. Shake to combine. Strain the cocktail over the prepared glass and garnish with a watermelon slice and fresh mint.
For a complementary cake pairing, try our organic Tangy Lemon Cake with Vanilla Bean Frosting, fresh strawberries and another sprig of fresh mint, or try topping your cake with homemade strawberry compote. The extra sweetness of the strawberries balances the cooler, more refreshing notes of the Cucumber Watermelon Margaritas. Remember to save those strawberry tops to infuse your water and keep hydration a priority.
