Blackberry Skinny Mini Cake: Healthyish Brand Style
Fresh from the oven, this blackberry skinny mini cake is so delicious and moist you will want to bake one every day! It’s the perfect treat for anyone managing their portion sizes or for anyone who just LOVES delicious mini cakes!
And to mix things up a bit, we blended in some crushed blackberries, giving this mini cake a natural and delicious purple hue. To see other ways you can use natural food dyes for baking, click here.
What You’ll Need:
1 Organic Skinny Vanilla Baking Kit
5 blackberries (and extra to use as garnish)
1 tablespoon of room temperature, unsalted butter
2 tablespoons of 2% organic milk
Preheat the oven to 350 degrees
Grab a small cereal bowl, whisk, and spatula
Get your Healthyish baking kit and take out 1 pouch of cake mix, 1 pouch of frosting and 1 biodegradable, unbleached baking cup
In the small bowl add together the butter, milk and cake mix pouch. Blend well
Sprinkle in your berries and gently whisk everything together until the berries break down
Next, you’ll lightly spray your unbleached, biodegradable baking cup with cooking spray
Add batter to the baking cup
Bake at 350 for 13-14 minutes or until a toothpick comes out clean from the center of the mini cake.
Let it cool for 5-10 minutes before frosting
Garnish with extra berries and ENJOY!
