What I love most about Summer is enjoying the outdoors, grilling my favorite foods, and indulging in a little something sweet! And nothing says Summer dessert quite like these adorable mini strawberry cakes.
While they are not strawberry flavored, they are so cute and easy to make that you’ll be adding them to any Summer menu! And if you want a pop of strawberry flavor, you can substitute the beet juice for fresh crushed strawberries! (Just know they might to get as pick in color as the they do with the beet juice.)
So, let’s get started!
What you’ll need: Makes 3 Mini Strawberry Cakes
4 tablespoons of butter (unsalted)
8 tablespoons of 2% milk
3-4 teaspoons of beet juice
1 pouch of Color Kitchen’s all-natural green food dye
Preheat your oven to 350 degrees
Grab two small mixing bowls, a whisk, and spatula
In one of the small mixing bowls, add 3 pouches of Healthyish cake mix, 3 tablespoons of butter and 6 tablespoons of milk. Whisk well.
Next, you will want to stir your beet juice into the batter. Whisk well.
In the second small bowl you will add 1 pouch of Healthyish cake mix, 1 tablespoon butter, and 2 tablespoons milk. Whisk well.
You will take about half of the cake batter and spoon it into a Ziploc bag. We are going to use the Ziploc bag as a small piping bag – so cut a very small slit into the corner of the bag and set this aside.
You will then take the remaining cake batter and add in your all-natural green food dye from Color Kitchen. Whisk well.
You will want to add the green colored batter to a separate Ziploc bag. Cut a slit in the corner just like you did with the first one.
Now, you will take 3 unbleached, biodegradable baking cups out of your Healthyish baking kit and gently spray them with cooking spray.
Evenly distribute your pinkish / reddish cake batter among all 3 of the baking cups
Next, take your Ziploc bag that has the green cake batter and gently squeeze it on top of the pinkish batter into the shape of strawberry stems
Once you finish that step, you will take you vanilla cake batter and use it to dab small little dots all over the “strawberry”. This will give the effect of strawberry seeds.
Once you complete all of the steps you will bake you mini strawberry cakes for 12-14 minutes at 350 degrees.
Remove them from the oven and ENJOY!! Best served warm
