Red, White and Blueberry! Mini marble layered cake for the 4th of July

Celebrate this 4th of July with a mini marble layered cake! Swirled to perfection, our sweet beet and vanilla bean cake mix are the perfect combination. Top with Healthyish frosting, and a handful of fresh berries and you’ll have the perfect patriotic mini dessert.

So, let’s get started.

What you’ll need: Serves 2-3

1 Sweet beet baking kit

1 Vanilla bean baking kit

2 tablespoons of room temperature (unsalted) butter

4 tablespoons of 2% milk

handful of blueberries or your favorite fruit topper

Directions

Preheat your oven to 350 degrees

Grab two small mixing bowls, a whisk, and a spatula

Mix together 1 pouch of vanilla bean cake mix, 1 tablespoon unsalted butter and 2 tablespoons of milk in one bowl

In a separate bowl mix together 1 pouch of sweet beet cake mix, 1 tablespoon of butter and 2 tablespoons of 2% milk

Grab 2 biodegradable, unbleached baking cups out of your baking kit

Lightly spray the baking cups with cooking spray

Pour half or each batter into the cups – use a toothpick to combine the batter to create a swirled marble effect

Bake for 12-13 minutes – allow them to completely fool before frosting

Once cool, lightly frost the tops of both mini cakes using your Healthyish organic vanilla bean frosting – (also comes with the kit)

Stack your mini’s one on top of the other, top with fresh blueberries and enjoy!
